Chickpea and Lentil Greek Salad

Refreshing a delicious. Make this for meal prep or a potluck!

Ingredients

  • 1 can chickpeas drained & rinsed
  • 1 can lentils drained & rinsed
  • 1/2 english cucumber diced
  • 1 red or orange pepper diced
  • 1 cup cherry tomatoes diced
  • 1/4 cup fresh parsley finely chopped
  • 2-3 green onions sliced
  • 1/4-1/2 cup crumbled feta
  • 1/4 cup sliced kalamata olives
  • 2-3 tbsp olive oil
  • 2-3 tbsp lemon juice (juice of 1-2 lemons)
  • 2-3 tsp Italian seasoning

Instructions

  1. Mix dressing: Whisk olive oil, lemon juice and italian seasoning to make dressing. You may need to make extra depending how much dressing you like with you salads, but start with this amount.

  2. In a bowl, mix together all of the other ingredients. Add dressing and stir to combine.
