Summer is finally here! The weather is warming up, the sun is out and if you’re like me, you’re craving more fresh, cold foods or want to fire up the grill. If that’s the case, you will love this Black Bean and Pineapple salsa! It’s great on its own as a side dish, as a topping on grilled fish and chicken or as a dip.

I originally made this recipe on a local TV show in Windsor, Ontario called That Sports Show. Watch the video posted below to see me prepare it and to hear about the role of nutrition in managing inflammation for athletes. The salad contains a wide range of nutrients including antioxidants like Vitamin C, Vitamin E, Lycopene and other nutrients like Omega 3 fatty acids and fibre. All of these can play a role in keeping your immune system healthy, helping you recover from exercise and feel great.

Black Bean Pineapple Salsa

Delicious dip, topping or salad!

Ingredients

  • 1 can black beans drained and rinsed
  • 1/2 orange pepper diced
  • 1/4 cup cherry tomatoes halved
  • 1 cup pineapple diced
  • 1/4 red onion minced
  • 1 avocado diced
  • 2 tbsp hemp seeds
  • Juice of lime
  • 1 clove of garlic minced
  • pinch of salt

Instructions

  1. Add all ingredients together in a large bowl and mix well to combine. Serve cold.
