Whether you are a vegetarian or not, consider making beans & legumes a regular part of your diet. Not sure what to do with them? Start with this simple, satisfying greek salad!
Beans are full of fibre and a source of protein so they can make almost any meal more satiating. Many of my clients don’t eat them because they don’t know how to cook them. Some ways to use them include adding them to soups, chill, mixed with rice, mixed with ground meat in tacos and pasta sauce. Another reason they may be avoided is because they can cause a bit of gas for some people. Rinse and drain your cooked beans several times with cold water to help reduce this. I love bean salads because they are quick recipe to batch cook for the week and there are so many ways to diversify them. If you love Greek salad, you will love this salad below! It tastes even better after a few days in the fridge.
Chickpea and Lentil Greek Salad
Refreshing a delicious. Make this for meal prep or a potluck!
Ingredients
- 1 can chickpeas drained & rinsed
- 1 can lentils drained & rinsed
- 1/2 english cucumber diced
- 1 red or orange pepper diced
- 1 cup cherry tomatoes diced
- 1/4 cup fresh parsley finely chopped
- 2-3 green onions sliced
- 1/4-1/2 cup crumbled feta
- 1/4 cup sliced kalamata olives
- 2-3 tbsp olive oil
- 2-3 tbsp lemon juice (juice of 1-2 lemons)
- 2-3 tsp Italian seasoning
Instructions

Mix dressing: Whisk olive oil, lemon juice and italian seasoning to make dressing. You may need to make extra depending how much dressing you like with you salads, but start with this amount.

In a bowl, mix together all of the other ingredients. Add dressing and stir to combine.
